This is kind of my signature item during bbqs and its absolutely irresistible even for hardcore meat lovers like me 😀 . I adore it, my friends who have tried it adore it and I always get requested to make it during bbqs. Try it once for your bbq party and I can assure you, you will not regret.

You may also bake it in oven instead of bbq, refer note at the end of the post.


So here’s the much requested recipe.

1.Scrub the skin of potato nicely and boil them in water. If your prefer to bake them instead of boiling, go ahead.
2.Cut the boiled/baked potatoes into half and scoop out the flesh such that u have 2 shells about half inch thick and keep aside the scooped potato flesh into a bowl. Brush in some olive oil or melted butter into the skin side of the potato shells and keep aside.
3.Add warm melted butter,hot milk and salt into the bowl with the potato flesh and smash it well. Just pour milk bit by bit such that the mashed potato is thick and not watery. Remember your melted butter should be warm & milk has to be hot, only then your mashed potato will be creamy.
4. Add cream cheese, sour cream and spring onion into the mashed potato mix and mix well until it is thick and creamy. If it’s too thick, add bit more milk and mix.
5. Scope the mashed potato mix back into the potato Shells and wrap with a aluminum foil .
6. Bbq the wrapped potatoes similar to how you would do for corn wrapped in aluminum foil. This won’t take as much time as the corn, since the potato is already cooked, you just want the cheese to be nicely melted inside.

Note for Baking:
To bake it in oven instead of bbq – Preheat the oven to 180c and bake for about 10-12 minutes.
